For millennia, bread was a staple, crafted with time-honored methods employing whole grain flour and active yeast. This ancestral loaf was more than just a culinary delight; it was a potent source of sustenance, offering fortification and therapeutic benefits. The 19th century ushered in an innovation: a process to extend flour's longevity by stripping away the nutrient-rich wheat germ and bran, leaving behind the starchy endosperm. While this refined flour boasted a superior shelf life, it came at a significant cost, sacrificing nearly all its vital nutrients. The wholesome proteins, essential fats, precious vitamins, crucial minerals, and beneficial fiber residing in the bran and germ were eliminated. This trajectory has culminated in the bread of our current era, the 21st century. A stark departure from the wholesome offerings of our forebears, contemporary bread is laden with artificial additives and preservatives. Astonishingly, despite these interventions, its susceptibility to spoilage remains, often succumbing to mold within a mere three days. Moreover, it undergoes a litany of detrimental treatments: overcooking, dehydration, repeated freezing and thawing, and mechanical extrusion. The result is a product, remarkably inexpensive to manufacture, yet frequently burdensome to digest and, when consumed habitually, capable of inflicting profound harm upon the body. His discoveries were disquieting: loaves with scorched crusts, a potential carcinogen; bread prepared with desiccated flour; and a host of other concerning practices. Even organic varieties, while showing marginal improvement over conventional options, fell woefully short of being classified as genuinely healthy sustenance.
